Eat a New Type of Food Every Month: Beet Fettuccine

This amazing Italian market opened up near my office and I’m smitten, especially because of their homemade pasta and sauces. I bought a portion of their beet fettuccine, which was a great raspberry color before I cooked it. As you can see, it turned into a pale pink hue.

I sauteed some garlic, olive oil, and butter, then topped with Parmesan. I was hoping it would have more of a beet flavor,  but it was just used for color.
